Rockford’s easy breakfast muffins Yields 12 sandwiches A dozen eggs, organic free range 1/2 Cup organic broccoli, diced 1/2 Cup red bell pepper, diced ½ Pound ground turkey, organic ¾ Cup shredded organic raw cheddar cheese Sea Salt to taste Black pepper to taste 1 Teaspoon cayenne pepper | *In a medium size sauté pan heat coconut oil on medium high heat and cook ground turkey until no longer pink, and drain. In a very large bowl, beat the eggs. Add broccoli, red pepper, and seasoning. Stir in turkey and cheese. Spoon mixture into greased muffin cups, 1/3 cup at a time. Bake at 350 degrees for 20-25 minutes or until a knife inserted near the center comes out clean. |
