Crazy Tuna Salad Yields 6 - 7 servings 3 Cans organic tuna in water 6 Mini organic sweet peppers,diced 1 Cup chopped raw organic,cashews ¼ Cup grain mustard ¾ Cup creamy cilantro vinaigrette, 2 Teaspoons cayenne pepper Sea salt to taste Pepper to taste Creamy cilantro vinaigrette 1 Cup organic yogurt 1/2 Cup coconut milk 2 Tablespoons avocado oil 3 Tablespoons lime juice 1 Cup organic fresh cilantro 1 Tablespoon rice wine vinegar Stevia to taste | *If cashews were not purchased chopped, pulse in food processor a couple of times. Place the first 8 ingredients into a large bowl and mix until everything is incorporated well. Place the vinaigrette ingredients in the bowl of your food processor or blender. Mix until smooth and remember to add the avocado oil at the end, until smooth dressing forms. Enjoy!! |
