Zucchini Noodles

How to make Zucchini noodles
Yields 6 servings
          2 medium-sized zucchini, washed, dried, and trimmed at both ends


* Use the julienne blade of your mandolin, slice zucchini lengthwise into long, thin strands.  If you don't have a mandolin you can use a vegetable peeler or a knife, and simply cut into long strands. To serve, twirl small amounts of zucchini strands with a fork and slip off onto individual serving plate. You can serve hot or cold.
